For those who didn't know the toffee process like me, I put 1 cup butter and 1 cup sugar....and that did not work, the two ingredients didn't combine and it left me with a black bubbling sticky mess that got hard when it cooled (hot warm melts it) I did it again, same ratio, and before it could get black and bubbly, I wanted to give up so I threw some of the melted butter in the sink, and put it back on the stove (wasn't giving up yet YET) low and behold, I had toffee. The sugar melted and was getting ribbon-like. So it seems the ratio of butter to sugar has to be small. Little butter, more sugar. Hope that helped someone

For people wanting the 2-Day cookie experience but not having the time or patience, here's an alternative! Use the 2-Hour recipe, but brown your butter instead (cool with an ice cube) and add 1/2 teaspoon of espresso powder to the dry ingredients. These two additions really deepen the flavor and is barely any extra effort!
I learned that smacking the dough till its compact in the scooper and then lining the cookies and baking them, make them really dome like and bite size 🙂

For those who didn't know the toffee process like me, I put 1 cup butter and 1 cup sugar....and that did not work, the two ingredients didn't combine and it left me with a black bubbling sticky mess that got hard when it cooled (hot warm melts it) I did it again, same ratio, and before it could get black and bubbly, I wanted to give up so I threw some of the melted butter in the sink, and put it back on the stove (wasn't giving up yet YET) low and behold, I had toffee. The sugar melted and was getting ribbon-like. So it seems the ratio of butter to sugar has to be small. Little butter, more sugar. Hope that helped someone

INGREDIENTS
½ cup granulated sugar
¾ cup light brown sugar, packed
1 teaspoon kosher salt
½ cup (1 stick) unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
4 ounces milk or semi-sweet chocolate chunks
4 ounces dark chocolate chunks
PREPARATION
1. In a large bowl, whisk together the granulated and brown sugar, salt, and butter until a paste forms with no lumps.
2. Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before dissolving.
3. Sift in the flour and baking soda, then fold with a spatula until just incorporated. (Be careful not to overmix, which will cause the gluten in the flour to toughen, resulting in cakier cookies).
4. Fold in the milk and dark chocolate chunks.
5. Chill the dough for 2 hours, or, for a more intense toffee-like flavor and deeper color, overnight. The longer the dough rests, the more complex its flavor will be.
6. Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
7. Using a 2½-ounce ice cream scoop or a ⅓ cup measure, scoop the dough onto the prepared baking sheets, leaving at least 4 inches (10 cm) of space between each cookie and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly. A half sheet pan should fit no more than 6 cookies.
8. Bake for 12-15 minutes, or until the edges have started to lightly brown. Let cool completely before serving.
9. Enjoy!

Use the 2-Hour recipe, but brown your butter instead (cool with an ice cube) and add 1/2 teaspoon of espresso powder to the dry ingredients. These two additions really deepen the flavor and is barely any extra effort!
But that's completely against the point of a 2-day cookie...

No that finishes in one second, not two. I’d know, because if I waited two seconds to finish the box someone else would want some.

I learned that smacking the dough till its compact in the scooper and then lining the cookies and baking them, make them really dome like and bite size 🙂
